Pancake Master Mix
I have been making this pancake master mix for at least 20 years. We've taken it on camping trips and vacations to the cabin. I've mixed up small batches to give as gifts. And I always have a bucket full in the cupboard.
10 cups whole wheat flour
2 cups unbleached white flour (use all whole wheat flour if desired…that's what I do)
1/2 cup baking powder, rounded (I use aluminum free)
4 tsp salt
4 cups nonfat dry milk
**The original recipe called for 3/4 cup sugar. You can put that in or leave it out. It works out to about 1 T. per batch of pancakes.
Combine all the ingredients and mix well. Store in a covered container in a cool dry place. Use as directed below:
Note..when I give the pancake mix away, I make a tag with the instructions on it.
Master Mix Pancakes
1 cup pancake master mix
1 T. oil
1 egg, slightly beaten
1/2-3/4 cup water
Mix until ingredients are just combined, adding water to desired consistency. Bake on a griddle until done; flipping once.
I hope you enjoy these pancakes as much as my family has over the years. I grind my own wheat flour and sometimes I will mix red and white wheat for a heartier pancake.
